Of all the ways to stay in Istanbul, none is quite so literal as living in a palace on the water. Çırağan Palace Kempinski is the only Ottoman imperial palace on the Bosphorus to have become a hotel, and the strait is its real luxury: ferries, tankers and fishing boats pass the terrace all day, the far shore changes colour by the hour and the water never keeps still.

Inside, the arrangement is precise. The 317 rooms divide into hotel rooms, hotel suites and palace suites, the last of these inside the palace itself and something else again. There is an outdoor infinity pool, a proper hammam at Sanitas Spa and, in the palace, Tuğra, where Turkish cooking is given the setting it deserves. The great mosques and the bazaars lie along the shore; the temptation is to stay put.

The strait as the main event

Most city hotels offer a view; this one offers a current. The Bosphorus runs past the palace at close quarters, and the traffic on it, ferries crossing, freighters heading north, small boats cutting between them, gives the day a rhythm of its own. The outdoor infinity pool and the terrace of the Bosphorus Grill put guests as close to the water as the city allows, and the light does the rest: silver in the morning, gold by late afternoon, then the far shore lit like a necklace. Istanbul is best understood from here, watching it move.

Hotel suites and palace suites

The distinction matters. Rooms and hotel suites are the comfortable core of the address, many with the water in the window; the palace suites belong to the imperial building and to a different order of ceremony, with the proportions and finishes of a sultan’s residence. Between them, 317 keys make this a large hotel, though the palace grounds absorb the number without strain. A canopied bed with the Bosphorus beyond the glass is the image the hotel is known for, and it is not an exaggeration.

Tuğra, Bellini and the hammam

Tuğra is the dinner the palace was made for: Turkish cooking of the courtly kind, served under palace ceilings with the strait outside. Bellini answers with Italian, Rüya Istanbul with Anatolian dishes, and the Bosphorus Grill takes seafood out onto the terrace when the weather agrees. Le Fumoir and the Çırağan Bar carry the evening on. By day, Sanitas Spa keeps the Ottoman ritual alive in its hammam, marble, steam and a scrub that leaves the skin new, which is the correct way to recover from Istanbul.

The signature moment

Dinner at Tuğra begins while the water is still blue. Between courses the strait goes grey, then black, and the lights of the Asian shore come up one by one. A ferry crosses, lit like a lantern. By the time coffee arrives, the palace windows hold nothing but night and moving lights.
