Zermatt is not short of hotels with a view of the Matterhorn. CERVO is the one that also looks outward. Its 54 rooms and suites, with seven lodges beyond them, climb the slope above the village in wood, wool and lamplight, and the piste finishes at the door rather than somewhere below it. What sets the tone, though, is an appetite that declines to stay Swiss.

Bazaar is the meeting place and the noisy heart of the hotel; Madre Nostra keeps an Italian table in the Alps; Ferdinand answers for Valais with fondue and raclette. Beneath them, Ātman Mountain Spa runs a bathing culture borrowed from Japan, Bhutan and Mongolia. The Matterhorn is why people arrive. The rest is why they stay a week.

Where the piste ends

The run finishes at the door, which changes the shape of a winter day: the last descent has a destination rather than a car park at the bottom of it. In summer the same slope turns green and the walking paths take over. Zermatt lies below, close enough for dinner in the village and far enough that the resort keeps its own quiet. The Matterhorn presides over the whole arrangement.

Nomad, Alpinist, Huntsman

The room collections are named for temperaments as much as for sizes. Nomad is the pared-back, exploratory end of the hotel; Alpinist wraps mountain living in warm contemporary interiors; Huntsman is the most private and the most expansive. Beyond the rooms, seven lodges and the serviced apartments at Overlook Lodge take the same materials into larger and more independent quarters, suited to a group or a fortnight. Timber, wool and stone run through all of them, so the choice is one of mood rather than of standard.

A bathhouse of borrowed traditions

Ātman Mountain Spa is where the hotel makes its case. A Japanese onsen, a Bhutanese herbal hot-stone bath in its own wooden hut, two Mongolian yurts kept for treatments and stillness, a natural cold pool and a relaxation room with a fire and the peaks in the window: none of it is native to Valais, and together it makes far better sense of a long mountain afternoon than a sauna on its own. Changing is mixed, and parts of the spa are nude.

The signature moment

Late afternoon, and the onsen is warm enough to make the cold air on the face a pleasure. Steam rises past the pines. Down at Ferdinand the fondue pots are already out, and the walk from the water to the table takes under a minute.
