Kowloon arrives all at once, and Salisbury Road answers with public rooms built to slow it down. The Lobby is where the hotel keeps its time: ornate columns, palms, the grand staircase and the tea ritual beneath them, with Tsim Sha Tsui audible only when the doors open.

Above the public rooms the building sorts itself by outlook, the city on one side and Victoria Harbour on the other, with the Marco Polo Suite and its cream upholstery at the top of that argument. Three dining rooms of quite different temperament share the same roof, so an evening here can be French, Cantonese or entirely modern without the address being left. Between them they explain why the hotel has never needed to be fashionable: the ceremony is genuine, the harbour is free, and the rest is a question of which floor to give the evening to.

Salisbury Road and the waterfront

Tsim Sha Tsui begins at the door and the harbour promenade lies a few minutes further, which gives a day here its natural shape: the water in the morning, the district’s shops and museums through the afternoon, the public rooms filling again towards evening. Few grand hotels sit so squarely in the traffic of a city and remain so composed about it. The doors close, the noise stops, and Kowloon carries on outside without further comment.

Rooms sorted by outlook

The accommodation carries the classical character upstairs, with craftsmanship in the joinery and the technology kept out of sight. Categories differ chiefly in what they face, some the city and some Victoria Harbour, which makes the choice a real one rather than a matter of square metres. At the upper end, the Marco Polo Suite opens into a living room proportioned for company rather than for sleep. The rooms are quiet enough to make an afternoon indoors a legitimate plan.

Three kitchens, three moods

Gaddi’s is the formal room, French in its cooking and in its manner, and the one that asks most of an evening. Spring Moon answers in Cantonese, with dim sum and a kitchen that respects the older techniques. Felix belongs to another decade altogether: Philippe Starck designed it, and Victoria Harbour supplies the rest. Between the three, an evening can be spent entirely within the building without any sense of having settled for the hotel restaurant.
