Most hotels with a great restaurant treat it as an amenity. Here it is the reason. T’ang Court holds three Michelin stars for its Cantonese cooking, and a table in it reorganises an evening, a stay and occasionally a whole visit to Hong Kong. The rest of the building is built to match that seriousness without imitating it.

The interiors take a European line, all cream and chandeliers and a lobby that sparkles harder than the street outside, which in Tsim Sha Tsui is a considerable undertaking. Palm Court borrows the London ritual and sets Southeast Asian cooking beside it. The Food Gallery covers every other appetite and hour. Out of the door, Canton Road, Harbour City, the Museum of Art and the Star Ferry are all within a walk, so the harbour is available whenever the appetite for it returns.

Tsim Sha Tsui at street level

The neighbourhood does a great deal of the work. Canton Road and Harbour City handle the shopping, the Hong Kong Museum of Art handles the afternoon and the Star Ferry crossing to Central remains the finest few minutes on the harbour. All of it is walkable from the door, which means a day here can be assembled and abandoned at will, with the hotel close enough to serve as a base rather than a destination in itself.

Cream, chandeliers and a chaise

The rooms take the hotel’s European manner upstairs: cream tones, marble bathrooms and enough seating to feel furnished rather than fitted. Premier Rooms add floor-to-ceiling windows, a chaise longue and a marble bathtub. The Harmony Suite works as a small flat, with a separate living room and two bathrooms, while the Director Suite runs a cinematic theme for guests who would rather not sleep somewhere anonymous.

T’ang Court holds three Michelin stars for Cantonese cooking, which in this city is not a decoration but a position. The room is opulent, the service formal and the menu the reason to dress properly for dinner. Palm Court takes the opposite tone in the lobby, with the Langham afternoon tea ritual and Southeast Asian dishes beside it. The Food Gallery deals with everyone travelling on a different hour and appetite.

Eight o’clock at T’ang Court, and the room has already decided the pace. Dishes arrive in a sequence that makes an argument. Outside, Tsim Sha Tsui is at full volume and entirely inaudible, and the walk back to the lift is measured in seconds.
